The Rub--The Recipe

—from my home to yours!

Nita’s Notes:  Free food recipe alert!  Lotsa flavor without lotsa anything you’re counting!  This is great on whatever you’re grilling, broiling, roasting , baking or sautéing!  I love it on fish and pork chops.  (It would be scrumptious on ribs if you’re leaning that way for Memorial Day.)  I keep a batch mixed up and stored in my spice/herb pantry at all times.  (It’s also great sprinkled on veggies before cooking.) 

Ingredients:

2 tablespoons freshly-ground black pepper
2 tablespoons dried parsley
1 tablespoon dried rosemary leaves, crushed
1 tablespoon dried tarragon leaves, crushed
1 tablespoon dried thyme leaves, crushed
2 teaspoons dried sage leaves, crushed
1 1/2 teaspoons garlic powder
1 1/2 teaspoons lemon peel
1 teaspoon sea salt (optional—if you omit the salt, add an extra teaspoon of sage.)

Preparation:

1)      Combine all ingredients in a small-to- medium mixing bowl.  Blend well with fork.
2)      Pour rub  mixture into a glass jar with an airtight lid and store covered out of direct sunlight “up to six months”.  (That seems to be the standard for herbs and spice storage—but, I keep dried herbs much longer than that.  I write the spice blend name and date it was made on a mailing label and stick it to the jar.)
3)      Rub well on your particular choice of protein before you get ready to grill, roast, broil or bake.   

Numbers you need to know:

Recipe yields 9 tablespoons—that’s 36 (3/4 teaspoon) servings of rub.  You could halve the recipe; but, I guarantee this is a rub you’ll love to have on hand for all occasions, including quick “regular day” meals.   As a general guideline, I use a tablespoon per every pound (4 servings) of whatever I’m a-cookin’.
